Favorite Things and A Whole Lotta Scones

The sun has set but it’s still light enough to see trees, meadow, and the white blossoms dappling the blackberry bushes. Summer has arrived at last bearing hot sunshine, cooling breezes and nights warm enough to leave the windows open. I love evening at my place, love how the darker it gets the quieter it gets until at last I go to bed with only the sound of the creek and the wind in the trees lulling me to sleep.

I don’t have any food to share with you today because in a moment of lunacy I made waaaay too many scones for my Narnian High Tea yesterday, and will be happily noshing on them for the next day or two.  Admittedly, I am not fretting over the situation. Almond scones with whiskey cream, lime curd and blueberries?? Yes, please!!

Instead I will share a few pictures of things that delighted me today.

High Tea with Aslan: Almond Scones with Whiskey Cream

It had been a trying night for Lucy and Susan. They had clung together in the darkness as their beloved Aslan surrendered himself to the White Witch at the Stone Table. Tears coursed down their cheeks and sobs choked their throats as they covered their eyes while the horde of hideous creatures joined the White Witch in torturing, humiliating, and killing the magnificent lion.

When the murderers left they crept to Aslan’s side, kissed his beloved face, stroked his beautiful fur and cried until there were no tears left.

All seemed utterly, hopelessly lost.

The night grew desperately cold, but still they lingered. They watched in horror as mice clambered over Aslan’s body then their eyes widened as they realized the tiny creatures were gnawing the ropes that bound him. The hours passed, the sky began to lighten, and as they got up to pace and get the blood flowing to their stiff limbs, an almighty crack startled them. The Stone Table was split down the middle and Aslan was gone.

They had just begun to grieve this new calamity when a great voice resounded behind them. There stood Aslan, his golden mane glowing in the light of the rising sun. The girls threw their arms around him and peppered him with kisses. Soon they were running around the hilltop, laughing and wrestling, rolling and chasing, until Aslan drew himself up, urged the girls to plug their ears, and let out a massive roar that bent the trees in its ferocity.

Then the girls clambered onto his great, strong back, tangled their fingers in his soft mane and held on for dear life as Aslan took them on a glorious ride threading forests, leaping streams, cavorting around waterfalls, running through meadows, over hills and valleys until at last they arrived at the dark, brooding castle of the White Witch.

Susan and Lucy watched in delight as Aslan breathed life into all the poor creatures who had been turned into stone. A merry reunion took place when dear Mr. Tumnus awakened from his stony slumber. But they had no time to linger, as soon as they were ready Aslan lead the crowd of giants and centaurs, unicorns and dwarfs to the great battlefield where true Narnians were fighting for their lives.

It was a horrendous battle. Stone figures dotted the scene and everywhere the clashing of swords mingled with cries of pain and triumph. The girls slid off Aslan’s back and he tore into the melee with a mighty roar and threw himself at the White Witch, crushing her beneath him. As the evil woman fell the battle turned and within moments it was finished.

It was a costly victory. Many lay dead or wounded, among them Edmund. In his brave attack on the White Witch he had been badly hurt and lay bleeding, gasping, his face a sickly green. Aslan reminded Lucy of her cordial and she administered healing drops to as many as she could. When she returned Edmund was healed, standing tall and strong again.

That night they slept where they were, utterly exhausted from the events of the day.

I love how the next morning they awoke to find food prepared for them by Aslan, a “fine high tea.” It makes me smile to think of him bustling about while they slept, make sure they rested soundly while he brewed tea, and filled platters with scones, sandwiches and cakes. I knew he loved them.

I had my own Narnian High Tea this week, accompanied by my dear friend Nicole. We sipped sweet orange tea and chatted comfortably while we ate salmon dill sandwiches on blue cheese pepper bread, mint cucumber sandwiches on wheat, and almond scones slathered with lime curd, topped with whiskey cream and sprinkled with fresh blueberries.

It truly was a fine tea.

Almond Scones

Ingredients:

2 cups whole wheat flour

1 Tbsp ground almonds

1 Tbsp sugar

1 tsp salt

4 tsp baking powder

1/2 cup butter-flavored shortening

2/3 cup coconut milk

1 egg

1 tsp vanilla

1 egg

1 Tbsp raw sugar

Directions:

  1. Preheat oven to 450 degrees F
  2. Combine first five ingredients, sift if necessary.
  3. Blend in shortening until mixture resembles coarse crumbs.
  4. Stir coconut milk, egg and vanilla together. Add to dry mixture and toss with fork until moistened.
  5. Lightly mix dough until it holds together.
  6. Pat into circle 1/2 inch thick. Cut into wedges.
  7. Beat second egg and brush on tops of scones. Sprinkle with raw sugar.
  8. Bake for 10-12 minutes until golden.

Whiskey Cream

Ingredients:

1 cup heavy cream

1 cup sour cream

1/4 cup Bailey’s or other Irish Cream Whiskey

1 Tbsp agave syrup

Directions:

  1. Combine all ingredients and blend until stiff but spreadable.

I’m writing to you whilst grinning my head off at GLORIOUS sunshine streaming through my windows. Birds are twittering madly and warm breezes are wafting hither and thither. This has been the coldest, wettest June in my memory, but this evening is making up for it with unbelievable beauty.

Wednesdays I usually feature the marvelous fare whipped up by the Culinary Experimentation Club I’m a part of. Alas, poor health has kept me away the last two events, so I have nothing to share with you.

Instead I have pictures of the things I’ve been using to get myself better or, at the very least, make feeling ghastly a bit more beautiful.

Cup after cup of tea: Moroccan Pomegranate Red, Good Earth Original, Sweet Orange, Spearmint, Sleepytime.

This evening when the sun came out, I took a little stroll to the creek, closing my eyes and feeling the wind against my skin, the sun on my shoulders, delighting in the blackberry bushes festooned with blossoms.

My friend Alessio from Recipe Taster heard I was sick and encouraged me to partake of spoonfuls of honey and bowls of quark (fresh cheese) mixed with berries and flax seed. He said that in Germany, where he lives, the doctors prescribe quark along with traditional medication. So after my doctor visit this morning, I stopped by the market and picked up a tub of quark and a carton of perfectly ripe strawberries. Reaching home I mixed the quark with agave syrup, topped it with berries and sprinkled everything with flax seeds. Delicious! Tucked up in bed I basked in sunshine and felt spoiled rotten as I ate spoonful after creamy spoonful of Alessio’s concoction. I just KNOW it will help me feel better!

Alessio’s Get Better Soon Quark

Ingredients:

1/2 cup quark

1 tsp agave syrup

handful of strawberries, hulled and sliced

1 Tbsp flax seeds

Directions:

  1. Mix quark and agave syrup.
  2. Top with strawberries and flax seeds.

On today’s post I am thrilled to bits to feature the exquisite photography of my friend, Rebekah Chapman. A Southern girl at heart, Rebekah is a temporary transplant to Washington State and has captured its lush beauty in such a wonderful way. In celebration of Washington, I simply had to feature wild caught salmon. It is such a versatile fish and I have yet to discover a preparation I don’t like. Today I’m dining on one of my quickest, easiest versions: Pesto Salmon. Simply drizzle each fillet with lemon juice, sprinkle with salt, top with a liberal layer of pesto and bake for 10 minutes. Fast, delicious and healthy as can be. Do you like salmon? If yes, what is your favorite way to prepare it?

Pesto Salmon

Ingredients:

Salmon fillets

2 Tbsp pesto per fillet

1 lemon, quartered

Salt

Directions:

  1. Preheat oven to 400 degrees F.
  2. Place fillets in baking dish. Squeeze lemon liberally over each fillet and dust with salt.
  3. Spread 2 Tbsp pesto thickly over each fillet.
  4. Bake for 10 minutes and serve.

Good morning, dear ones! How was your weekend?

I was off to Seattle area on business and got to stay in a darling little bed and breakfast and have Baked French Toast with Apples. It was so fun to have a little excursion, sleep under a down comforter, and oh, that big ol’ clawfoot tub was fabulous. 🙂

After the business conference was over I got to spend the weekend with my dear friends Bekah and Trish. These women never fail to inspire me with their creativity and fabulous talents as photographer and writer/social media strategist. It was so nice to get to see them face to face, sharing fears and frustrations, thrills and accomplishments, laughing hard about our muss ups and celebrating the good things in our lives.

We talked a lot about creativity and beauty, how essential they are to our happiness and well-being. So Sunday afternoon was devoted to sprucing up my blog, feeling so excited when I figured out how to design my own header!! I also added some of my sketches to Facebook and am so happy to be developing these little creative outlets.

After happily indulging in a steady diet of donuts and Cheerios today, I am ready to get back to healthy, nourishing food like this dish of kale sauteed with tomato and garlic topped with Parmesan cheese. Mmm, it’s one of my favorite quick ways to get greens into my diet.

Sauteed Kale with Tomatoes, Garlic and Parmesan

Ingredients:

one bunch kale, rinsed and chopped

olive oil

2-3 Roma tomatoes, diced (or 1 can diced tomatoes, drained)

2 cloves garlic, minced

salt and pepper

1/4-1/2 cup Parmesan cheese, grated

Directions:

  1. Place kale in skillet of boiling salted water, simmer for 5-10 minutes until kale is tender. Drain.
  2. In another skillet cook tomatoes and garlic in olive oil for 5 minutes.
  3. Add kale and cook another 5 minutes. Salt and pepper to taste.
  4. Pour into serving dish and top with Parmesan cheese.
